Sambal Tomato @ Sambal Beldek (Jawa)


Sambal beldek merupakan sambal tradisi masyarakat Jawa. Resepi asal menggunakan tempe dan kepedasannya memang terasa (sangat pedas) sebab bahan utama cili padi yang banyak. Sesuai dengan namanya beldek yang bermaksud guruh.

Resepi ini telah diolah dengan menggunakan tomato untuk mengurangkan pedas.

Bahan-bahan:

Baby tomato (boleh diganti dengan tempe)
Cili padi
Cili besar
Bawang merah
Bawang putih
Ikan bilis
Minyak masak
Garam
Gula


Cara-cara:


  1. Tomato dibelah dua dan ketepikan 
  2. Kisar atau tumbuk cili padi, cili besar, bawang merah, bawang putih dan ikan bilis
  3. Tuangkan minyak yang mencukupi dalam kuali dan masuk bahan yang telah dikisar sehingga naik minyak atau sehingga air kering
  4. Bila dah kering masukkan tomato
  5. Masukkan garam dan gula secukup rasa
  6. Biarkan beberapa minit dan boleh diangkat

Ayam Goreng Kunyit



Resepi paling senang nak buat cuma leceh sikit ngan bahan-bahan.

Bahan-Bahan:

Isi ayam
Lobak merah
Bawang holland
Bawang putih
Kacang buncis
Brokoli
Lada Benggala (optional)
Cili merah/ hijau ( ditukar ker cili padi untuk rasa pedas)
Kunyit
Garam
Bunga kobis (tak letak sebab takde)
Minyak masak

Cara-cara:


  1. Potong kiub isi ayam dan gaul dengan kunyit dan garam (perap sekejap)
  2. Potong lobak merah, kacang buncis, lada benggala dan brokoli pangang dalam seinci
  3. Potong bulat bawang hollad
  4. Goreng ayam hingga garing dan ketepikan
  5. Pecahkan bawang putih dan cili padi, masukkan ke dalam baki minyak ayam yang telah dikurangkan
  6. Masukkan bawang holland, tumis hingga wangi
  7. Masukkan semua bahan kecuali lada benggala, tumis sehingga layu
  8. Setelah layu masukkan ayam yang telah digoreng. Tambah garam jika kurang masin.
  9. Akhir sekali, masukkan lada benggala, dan gaul sekejap sehingga bercampur
  10. Angkat dan sedia untuk dimakan dengan nasi panas

Doenjang Jjigae


Agak lama tak masak korean food. Doenjang paste yang beli beberapa bulan lepas pun masih tak berusik. So hari nie sebabkan teringin nak makan korean food, terhasillah doenjang jjigae. Doenjang nie adalah soy bean paste yang banyak digunakan dalam masakan orang korea. Warna tak menarik sangat sebab tak letak red pepper flakes sebab dah kehabisan.

Bahan-bahan:

Zuchini (hijau/ kuning)
Kentang 
Cili merah/ hijau
Ikan bilis
Udang
Doenjang
Bawang putih (dicincang)
Bawang holland
Tofu jepun (tauhu biasa pun boleh)
Leek 
Air
Garam 
Serbuk cili (tak letak sebab dah habis)

Cara-cara:

  1. Potong kiub zuchini, kentang dan tofu jepun
  2. Layang bawang, chili merah/ hijau  dan leek
  3. Masukkan semua bahan: ikan bilis, zuchini, kentang, bawang, cili, bawang holland , udang dan bawang putih
  4. Masukkan air sehingga menutupi bahan-bahan dalm periuk tadi
  5. Biarkan mendidih dan masukkan doenjang, garam secukup rasa
  6. Masukkan tofu dan biarkan mendidih sebentar 
  7. Akhir sekali masukkan leek dan tutup api
  8. Hidangkan bersama nasi dan banchan (side dishes)

Crunchy Almond Caramel


Recipe was inspired from: Azlitamasammanis 

Ingredients:
2 cups almond flakes
2 cups florentine mix
1 cup pumpkin seeds
1/6 cup black sesame ( i didn't put this)

Directions:
1) Combine all ingredients together in a bowl 
2) Pour in a baking pan prepared with parchment sheet
3) Bake for 10 minutes with 160 degree Celsius
4) Once done, take out from the oven and cut it based on shape that you like

Translated to Malay;
Resepi telah diolah dari :Azlitamasammanis  

Bahan-bahan:
2 cawan serpih almond
2 cawan campuran florentine
1 cawan biji labu
1/6 cawan bijan hitam (saya tak letak)

Cara-cara:
1) Gaul semua bahan dalam bekas
2) Tuang ke dalam dulang pembakar yang telah di alas kertas pembakar
3) Bakar selama 10 minit dengan kepanasan 160 Celsius
4) Setelah masak, keluarkan dari oven dan potong mengikut bentuk dikehendaki

Bubur Sum Sum


Pencuci mulut ini biasanya disediakan selepas majlis merewang kenduri kahwin orang keturunan Jawa d Johor. Biasanya selepas 2 atau 3 hari majlis perkahwinan selesai....Ia menjadi satu kemestian di kampung halaman saya dan bubur yang selalu saya tunggu sebab sedap... rasanya lemak manis.....

Bahan-bahan:

1 cawan tepung beras
2 1/2 cawan santan kelapa
sedikit garam
Daun pandan

Cara:

1. Satukan tepung dan garam dalm mangkuk
2. Masukkan santan dan kacau hingga larut
3. Masak adunan di atas api perlahan bersama daun pandan sehingga likat dan berkilat
4. Angkat dan sejukkan

Kuah

Bahan-bahan:

Gula melaka
Air
Daun pandan

Cara:

1. Panaskan air sehingga mendidih  bersama daun pandan
2. Masukkan gula melaka dan kacau hingga larut
3. Biarkan mendidih
4. Setelah mendidih, angkat dan tapis

Ketayap (Crepe roll with coconut filling) - Malay Traditional Dessert


Ingredients:

1 cups flour
1tbs tapioca flour
Salt (pinch)
Pandan leaves 
1 1/2 cups Water or Milk or Coconut Milk
Green coloring
1 egg (optional)
Oil

Directions:

1) In a small ball, whisk together flour, tapioca flour, salt
2) Blend/ Pound pandan leaves and with 1 1/2 cup of water and strained to remove the leaves
3) Add the pandan water to the dry ingredients
4) Add few dashes of green coloring to the batter
5) Heat medium size pan (non-stick), rub the pan with oil
6) For each crepe, spoon the batter and spread batter into a round, as thin as possible, buy not too thin. You can swirl the batter by moving the pan a little
7) Cook about 1 to 2 minutes, or until bottom slightly brown
8) Gently remove and place on plate
9) Put 1 - 2 tablespoons of coconut filling and fold the crepe to cover the filling


Coconut filling Ingredients:

Desiccated coconut
Brown sugar
Water

Directions:

1) In a wok, add water (about 2-3 cups), and add the brown sugar. Stir until the sugar dissolved
2) Add in desiccated coconut
3) Stir until the water dry and coconut is not watery

Kaswi - Traditional Malay Dessert


Ingredients:

1 cups flour
1 cups tapioca flour
3/4 cups brown sugar
3 cups water
1 tsp slaked lime water
Desiccated coconut 
Salt

Preparations;

1) Mix flour and tapioca flour
2) Add 2 cups of water to flour mix and stir to combine
3) Mix brown sugar and 1 cup of water until sugar dissolve
4) Add into flour mix
5) Add slaked lime into the batter
7) Pour into round/ square cake pan
6) Steam for about 20 to 30 minutes on boiling water until cook
7) Make sure it is completely before cutting
6) For the coconut, mix desiccated coconut with salt (to taste)
7) Serve kaswi with coconut

Stir-fry Watercress


Ingredients:

Garlic
Onion
Corn oil
Watercress
Oyster sauce
Salt
Sugar
Sesame oil (optional)

Preparations:

1) Cut the watercress, wash and dry 
2) Cut garlic and onion
3) Heat wok over medium heat and add oil
4) Stir fry garlic until brown, then add onion. 
5) Add oyster sauce, salt and pinch of sugar and stir until combine
6) Add watercress and and add salt to taste 
7) *Stir fry leave wilt and stems is soften but still bright green
8) Reduce heat and serve immediately

* If it is dry, you can add a bit of water

Marble Butter Cake


Original recipe taken from dzanariah and had adjusted the recipe a bit.

Ingredients:
125 gm dark chocolate 
125 gm butter
125 gm castor sugar - I'm using icing sugar
2 large egg
155 gm self raising flour
80 ml fresh milk
1/2 tsp vanilla essence

Steps:
1) Grease and line the round cake pan with baking paper and preheat the oven  with 160° C/180° C  
2) Melt dark chocolate in a pan with double boil technique
3) Cream butter, sugar with electric mixer with medium speed
4) Add egg 1 at a time, beating to combine and gradually add milk and vanilla essence
5) Gradually add flour and fold to combine
6) Divide the batter into 2 parts, mixed the chocolate into 1 of the batter. Now you have 2 types of batter; yellow and chocolate
7) Pour the batter into the baking pan, alternatively between yellow and chocolate batter until finish
8) Take any long skewer or knife or cake tester, then swirl around the batter 
9) Bake for 40 - 50 minutes or you can test it using cake tester

Cereal Cookies with Almond Nib and Coconut


A recipe created for this year Eid Mubarak.... Was scratching my head try to come out with new cookie idea and recipe...something different from last year Eid cookies... Alhamdulillah my mum like it...

Ingredients:

3 cups flour
1 cup corn flour
1 cup butter
1 cup sugar
2 eggs
1/4 cup dessicated coconut
1/4 cup almond nib
1/2 cup cereal
Vanilla essence
Cooking chocolate

Methods:

1. Mix butter and sugar until completely mix or until sugar is dissolved
2. Add eggs and vanilla essence and mix till combine
3. Add dessicated coconut, almond nib and cereal, mix until combine
4. Sift flour into the mixture little by little, stir to combine and knead gently until smooth
5. Preheat oven at 180°C/160°C fan-forced. Lined baking tray with parchment paper.
6. Using spoon, drop heaping tablespoon-size balls. This recipe can make between 70-100 pieces depending on your cookies size.
7. Baked until the bottom of the cookie is slightly brown (about 15 - 20 minutes).
8. Remove from oven and let is cool on the baking tray about 1 - 2 minutes.
9. Transfer to wire rack and cool it completely for 
10. Melt cooking chocolate - double-boiled/ using microwave
11.Use Piping bag and drizzle the chocolate on the cookies

Stir Fry Cassava Leaves and Prawn With Fermented Durian

Created this recipe when I just realized that I ran out of coconut milk in my kitchen…. Which I usually stock up a few in a month.. This is the downside when I didn’t do my  monthly groceries shopping…..Sighhh.... 

Ingredients:

Cassava leaves
Prawn
Fermented durian (Tempoyak)
Shallot
Garlic
Bird eyes chillies
Anchovies
Salt
Sugar
Water
Vegetable oil

Methods:

1) Boil water in a pot and add salt and bring to boil
2) Scald the cassava leave in the water until cook for few minutes
3) Drain the water and rinse in cold water
4) Put aside
5) Mince shallot, garlic, bird eye chillies ad anchovies in a mortar or if you do not have mortar, you can just mince the ingredient using knife 
6) Put oil in a pan, and sauté the mince ingredient and fermented durian (tempoyak) until fragrant
7) Add a bit of sugar 
8) Add in prawn and stir fry for a few minutes 
9) Add in cassava leave and add some water and simmer for a few minutes 
10) Add in salt to taste
11) Ready to serve with rice

Tempoyak is referring to fermented durian and usually made from lower quality durian which is not suitable for direct consumption with salt and turmeric. This can be eaten directly or cooked with vegetable or fish or sometimes with meat. The paste is very popular in Malaysia and some part of Indonesia.

Kalguksu - Knife cut noodle



Came across this noodle when I watched Sunday programme at KBS worlds: 2 days 1 Night. I was tempted to try this when seeing them enjoying this noodle. Taken this recipe from the website and walla..... it is very easy to made... especially if you have a machine to help you roll the dough....More information about kalguksu... refer to HERE 


Ingredients:
1 cup All-purpose Flour
1/3 cup Cold Water
1/4 tsp. Salt
1 Tbsp. Oil


Methods:
  1. Mix all-purpose flour, cold water, salt, and oil to form a dough and knead for 10 minutes
  2. The dough may look a bit dry in the beginning, but knead for 3 minutes before deciding to add more water.  In case you add water, just wet your hands and go back to kneading. 
  3. Wrap in plastic and let it rest for 30 minutes.
  4. On a clean, floured surface, roll out the dough with a roller to a thin sheet.  
  5. Fold and cut with a knife.  Make sure to flour your hands and the surface as necessary as you roll out the dough and cut to noodle strands.  
  6. Flour the cut noodles to keep each strand separated.
For chicken stock and garnishing
Ingredients: 
Chicken thighs (skinless)
Water
Onion
Soy sauce
Minced garlic
Sesame oil
Salt
Hot pepper powder
Light soy sauce
Black pepper
Zucchini


Methods:
  1. Chop and cut the onion into thin slices. 
  2. In large pot add water, add onion, meat and bring to a boil  lower the heat to medium and cook for about 20 minutes.
  3. Remove from heat and strain the broth, removing the chicken thighs and setting aside the strained broth for later. 
  4. When the meat cool and separate the meat from the bone into thin strip. 
  5. Marinade the chicken with soy sauce, minced garlic, green onion, sesame oil, salt, hot pepper powder, sesame seed and black pepper - mix well. Set aside.
  6. Cut zucchini to bite sizes. Sprinkle with clear soy sauce and salt. Taste and adjust for more salt if needed.
  7. Bring the stock to a boil and stir in the noodles, carefully separating with a chopstick. Bring again to a boil, adding cut zucchini - let it simmer until zucchini is cooked.
  8. Scoop the broth and noodles in a large bowl. Garnish with seasoned chicken meat on top. 
  9. Serve warm. Can serve with kimchi or other side dishes.

I'm back...... Fried Mushroom

It's been a while this blog has had a post.....Been busy going back to and fro to my hometown.... had my long awaited shopping break at Bandung....And reading new update in another blog made me want to start updating my blog......Yah....now I'm back after a long hiatus...... a lot of spider web and dust... 'cleaning in progress'.. aaaaaaa... choooommm.....ha ha ha ha

As a token after a long break from updating this blog... Here is a recipe on Fried mushroom..


Ingredients:

Osyter mushroom
1 cup flour
2-3 table spoon rice flour (can use crispy flour)
1 cup of cold water (ice water)
1 tbl spoon butter
White paper
Salt

Preparations:

1) Mix all ingredients in bowl except mushroom
2) Cut mushroom according to your preference
3) Dip the mushroom in the batter and deep fry in oil
4) Fry the mushroom until golden
5) Serve with chili/ tomato sauce

* Alternatively... can use readily available tempura mix....

Ramen Tomato Soup with Tofu and Brocolli


Tomato soup recipe taken from BBC website... recipe is a mix of Japan and western recipe...Kinda like it...

Ingredients:

Tomato soup (recipe as per below, alternatively can use Campbell canned tomato soup)
Brocolli
Tofu
Ramen

Method:

1) Prepare ramen noodle as per package instructions
3) In boiling water add brocolli, simmer until cook and rinse with cool water
2) In a pot, pour tomato soup and simmer until boil
3) Add tofu, brocolli and ramen
4) Allow to cook about 5-10 minutes
5) Serve hot

* There is no measurement given, ingredients are based on individual preference

Tomato soup recipe:

Ingredients:

2 onions, peeled and chopped
1 carrot, peeled and diced finely
1 clove garlic, peeled and crushed
1 stick celery, finely chopped
2 tbsp olive oil
450g/1lb fresh ripe tomatoes, halved
1 litre/1¾ pints vegetable stock
1 tsp sugar
salt and freshly ground black paper
handful fresh basil, shredded (optional)

Method:

1) Heat the oil in a large saucepan and add the onions, carrot and celery and garlic. Cover and cook gently for 10 minutes until soft.
2) Add the sugar, salt, pepper and tomatoes. Stir and cook for another 5 minutes.
3) Add the stock, bring to the boil and simmer for 10 minutes. Liquidise until smooth. If using the basil, stir in at the end.

Coca Cola Chicken Recipe


Simple and nice recipe.. finger licking good recipe....It's just like you are having a bbq chicken.....


Ingredients:

Boneless chicken breast ( I prefer to use chicken wing or drumstick)
1 Cup of Light sauce (I put less)
1 Can of coca cola
Salt to taste
Oil
<added turmeric powder>

Method:

Fry the chicken in frying pan then add coca cola and light sauce/ salt. Bring to boil until the sauce tickhens and chickens are caramelised...

I did a bit of changes on the recipe, marinated the chicken with turmeric powder and salt before fry it since I do not like to see pale looking fried chicken..

Creamy Butter Crab...

Another recipe to share... Love to eat this with mantou or chinese bun....

Ingredients:
Butter
Curry leaves
Evaporated milk
Water about 3 tablespoon
Bird's eye chillies - lightly poubd 
Garlic
Sugar and Salt to taste
Crab
Corn starch

Method:
1) Heat wok, melt the butter
2) Add birs's eye chilies and garlic
3) Add crab and stir continuously, it will slowly turn colour
4) Add evaporated milk and simmer about 5 minutes with low heat
5) Add corn starch to thicken the sauce
