Cereal Cookies with Almond Nib and Coconut


A recipe created for this year Eid Mubarak.... Was scratching my head try to come out with new cookie idea and recipe...something different from last year Eid cookies... Alhamdulillah my mum like it...

Ingredients:

3 cups flour
1 cup corn flour
1 cup butter
1 cup sugar
2 eggs
1/4 cup dessicated coconut
1/4 cup almond nib
1/2 cup cereal
Vanilla essence
Cooking chocolate

Methods:

1. Mix butter and sugar until completely mix or until sugar is dissolved
2. Add eggs and vanilla essence and mix till combine
3. Add dessicated coconut, almond nib and cereal, mix until combine
4. Sift flour into the mixture little by little, stir to combine and knead gently until smooth
5. Preheat oven at 180°C/160°C fan-forced. Lined baking tray with parchment paper.
6. Using spoon, drop heaping tablespoon-size balls. This recipe can make between 70-100 pieces depending on your cookies size.
7. Baked until the bottom of the cookie is slightly brown (about 15 - 20 minutes).
8. Remove from oven and let is cool on the baking tray about 1 - 2 minutes.
9. Transfer to wire rack and cool it completely for 
10. Melt cooking chocolate - double-boiled/ using microwave
11.Use Piping bag and drizzle the chocolate on the cookies

Stir Fry Cassava Leaves and Prawn With Fermented Durian

Created this recipe when I just realized that I ran out of coconut milk in my kitchen…. Which I usually stock up a few in a month.. This is the downside when I didn’t do my  monthly groceries shopping…..Sighhh.... 

Ingredients:

Cassava leaves
Prawn
Fermented durian (Tempoyak)
Shallot
Garlic
Bird eyes chillies
Anchovies
Salt
Sugar
Water
Vegetable oil

Methods:

1) Boil water in a pot and add salt and bring to boil
2) Scald the cassava leave in the water until cook for few minutes
3) Drain the water and rinse in cold water
4) Put aside
5) Mince shallot, garlic, bird eye chillies ad anchovies in a mortar or if you do not have mortar, you can just mince the ingredient using knife 
6) Put oil in a pan, and sauté the mince ingredient and fermented durian (tempoyak) until fragrant
7) Add a bit of sugar 
8) Add in prawn and stir fry for a few minutes 
9) Add in cassava leave and add some water and simmer for a few minutes 
10) Add in salt to taste
11) Ready to serve with rice

Tempoyak is referring to fermented durian and usually made from lower quality durian which is not suitable for direct consumption with salt and turmeric. This can be eaten directly or cooked with vegetable or fish or sometimes with meat. The paste is very popular in Malaysia and some part of Indonesia.

Bangkok (June 13th - 15th) - Part 2

Cont from Part 1...

Oleh kerana percutian di Bangkok nie leisure and santai... Aktiviti hari nie bermula dari pukul 9am... Harga bilik adalah termasuk breakfast... tapi apa yang kitaorg boleh makan cuma cereal, roti dan buah. Yang lain mintak maaf ada 'kerbau pendek' or tak yakin ngan apa yg diaorg letak... Alas perut je... lunch nanti boleh makan puas-puas kat MBK....

Selesai breakfast... we headed to Siam area... naik BTS walau hanya satu station je.... tinggi betul tangga BTS nie, berpeluh jugak sampai atas. Tak begitu ramai yang menggunakan BTS, kalau tak silap dari informasi dari sebuah rancangan kat Channel 707 (TLC), hanya golangan pertengahan ke atas yang menggunakan perkhidmatan BTS disebabkan harga tambang yang sedikit mahal jika dibezakan dengan tuk tuk...atau MRT.... Lokasi stesen jugak memainkan peranan.... Mungkin sebab tu tak ramai penumpang... lengang je.

Destinasi pertama adalah ke Siam Discovery untuk collect tiket untuk Madame Tussauds and Siam Ocean World. We bought combination tickets via online purchase, ada discount and sampai sana je just tunjuk copy email. Yang best hensem staff diaorg... he he he he.. sila rujuk gambar di atas.

Tujuan asal sebenarnya nak amik gambar ngan Nickhun... but sadly Nickhun figure kena pinjam Madame Tussauds Shanghai for 3 months... Alamat masa gie Shanghai nanti pun tak berpeluang nak tengok figure Nickhun. Maybe next visit to Bangkok.... Walaupun begitu.... kalau dah kaki bergambar... masih posing jugak ngan figure yang ada.... tak lepas peluang.... berangan bergambor ngan orang terkenal dunia.... ;)

Puas dah tengok ikan-ikan dan hidupan laut..... Next adalah masa untuk shopping..... We went to MBK.... ala-ala macam Sungai Wang.... Tapi besar lagi.... setiap level jual benda yang berlainan.... ada floor untuk IT and handphone and accessories dia lagi... harga murah sikit je dari kat Malaysia.... lepas convert... sikit je...(check smartphonelah...) Shopping kat sini best sebab tak serabut and banyak pilihan... but for me tak memborong sangat... just beli souvenir sesikit....

But sebelum operasi shopping... perut kena isi dulu.... terus naik ke medan selera dia di aras 5... ada few restaurant halal kat sini..... Best dapat makan authentic Thai cuisine.... Green curry and tom yam yang mengancam... Oleh kerana demam still tak kebah lagi, Iza just ordered nasi goreng....

Aktiviti shopping souvenir dan juga barang sendiri diteruskan.... Lama jugaklah kat sini... kalau boleh semua benda nak beli.... biasalah pompuan.... tapi bodyguard dua orang tu pun sakan bershopping... mengalahkan pompuan.... Gerak balik hotel dalam kul 8pm... sambil tu nak tengok Muay Thai sebelum balik... ada show every Wednesday night kat luar MBK.... Ramai lelaki je... Dah nama pun Muay Thai...

Kalguksu - Knife cut noodle



Came across this noodle when I watched Sunday programme at KBS worlds: 2 days 1 Night. I was tempted to try this when seeing them enjoying this noodle. Taken this recipe from the website and walla..... it is very easy to made... especially if you have a machine to help you roll the dough....More information about kalguksu... refer to HERE 


Ingredients:
1 cup All-purpose Flour
1/3 cup Cold Water
1/4 tsp. Salt
1 Tbsp. Oil


Methods:
  1. Mix all-purpose flour, cold water, salt, and oil to form a dough and knead for 10 minutes
  2. The dough may look a bit dry in the beginning, but knead for 3 minutes before deciding to add more water.  In case you add water, just wet your hands and go back to kneading. 
  3. Wrap in plastic and let it rest for 30 minutes.
  4. On a clean, floured surface, roll out the dough with a roller to a thin sheet.  
  5. Fold and cut with a knife.  Make sure to flour your hands and the surface as necessary as you roll out the dough and cut to noodle strands.  
  6. Flour the cut noodles to keep each strand separated.
For chicken stock and garnishing
Ingredients: 
Chicken thighs (skinless)
Water
Onion
Soy sauce
Minced garlic
Sesame oil
Salt
Hot pepper powder
Light soy sauce
Black pepper
Zucchini


Methods:
  1. Chop and cut the onion into thin slices. 
  2. In large pot add water, add onion, meat and bring to a boil  lower the heat to medium and cook for about 20 minutes.
  3. Remove from heat and strain the broth, removing the chicken thighs and setting aside the strained broth for later. 
  4. When the meat cool and separate the meat from the bone into thin strip. 
  5. Marinade the chicken with soy sauce, minced garlic, green onion, sesame oil, salt, hot pepper powder, sesame seed and black pepper - mix well. Set aside.
  6. Cut zucchini to bite sizes. Sprinkle with clear soy sauce and salt. Taste and adjust for more salt if needed.
  7. Bring the stock to a boil and stir in the noodles, carefully separating with a chopstick. Bring again to a boil, adding cut zucchini - let it simmer until zucchini is cooked.
  8. Scoop the broth and noodles in a large bowl. Garnish with seasoned chicken meat on top. 
  9. Serve warm. Can serve with kimchi or other side dishes.

Bangkok (June 13th - 15th) - Part 1

My 2nd trip in 2012.... Bangkok , Thailand.... Actually nie adalah 2nd trip to Bangkok... sebelum nie dah pernah sampai tapi cuma di airport je... transit flight from KL - Phuket, masa tu naik Thai Airways in year 2000. Lama tu kan... Pun tak ingat sangat dah rupa Bangkok masa tu... nampak pun di awan biru... tak sempat nak round... So this trip was specifically arrange untuk menikmati kota Bangkok.....

Trip nie from June 13th - 15th, tak cukup hari rupanya... ingatkan cukuplah nak round semua tmpt.... rupanya tidak... agak rushing sebab kalau boleh semua nak jejak and pegi.... Trip kali nie bukan shopping trip yg kebiasaannya kami arrange... maybe next trip will be shopping trip... woot woot...dah berangan nak buat shopping trip tu...baru je balik seminggu.... ada sesaper nak join?????

Our flight was at 10.20pm on June 12th, so kira sampai kat BKK nie nearly midnight... tapi takpe ada 2 bodyguard yg follow our trip.... tapi masalah jugak sebab bila cakap ngan pemandu taxi diaorg nie tak boleh ckp English and bila mentioned our hotel diaorg macam terpinga-pinga... nasib baiklah ingat nama hotel dan area mana... We arrived Bangkok City Hotel kat area Ratchathewi around 1.00 am....selepas pemandu taxi round beberapa kali sebab tersalah masuk simpang... lepas check in... check bilik boleh tahan besar dengan cuma 3 bintang.... kalah hotel kat Bandung and HK.....puas hati sebab bilik besar dengan LCD tv... washroom yang bersih... but sadly takde iron.....sebab diaorg ada sedia self laudry services.....

For Muslim.. highly recommend this hotel.. sebab depan hotel tu ada masjid and banyak restaurant makanan halal kat area sini... so kira tak kelaparanlah... memalam pun senang cari makan sebab restaurant bukak sampai midnight.... Dan mostly diaorg boleh cakap Melayu e.g. restaurant Farida, restaurant Bintang apa ntah.... harga pun berpatutan.... Roti canai pun boleh dpt makan... tapi malam sahaja... he he he...

BTS terdekat hanya perlu berjalan kaki 10 minit; BTS Ratchathewi station....senang nak move around BKK... Kalau nak gie Pratunam area... jalan pun dlm 20 minitlah sambil tu boleh menyimpang masuk kedai-kedai... tak pun amik tuk tuk.... tak mahal sgt....so overall puas hati dengan service dan lokasi hotel nie... Wifi pun laju....

Bandung, Indonesia - Part 2


Cont from Part 1...

Hari kedua lebih focus ke acara berjalan-jalan sekitar bandung.... Tempat pertama sudah tentu Gunung Tangkuban Parahu... Keluar hotel dalam pukul 9.00 am.... Jauh jugak rupanya tempat nie... Jalan pun bengkang-bengkok just like nak naik Cameron Highland.... tapi best sejuk.... Tangkuban Parahu nie sebenarnya gunung berapi yang dormant... last dia meletus tahun 1959.... Tapi masih ada lagi yang berasap kecik-kecik.... Sampai tempat nie je... bau sulfur agak kuat....Kalau berminat boleh hiking... ada package kalau nak turun dari main spot... But not for us... baju and kasut tak sesuai....



Nie permandangan dari observation deck... pondok? Nama Tangkuban Parahu nie mengambil sempena ngan legend kisah perahu terbalik..... bila seorang anak jatuh cinta dengan ibu kandung dia....For further info bolehlah click kat sini Wikipedia.


Akar kayu yang banyak dijual kat atas.... tak beranilah nak beli sebab tak tau apa fungsi akar kayu nie...

My frens beli jagung dan pulut bakar... teringin nak rasa.... pulut tu makan ngan kelapa dan gula... oklah rasa dia... biasa je.... Then... pegi ke ladang strawberry yang memang terkenal kat Bandung... But sadly no strawberry for self plucking activity.... We just bought over the counter....

Rasa dia biasa je... sama macam kat Cameron... Size dia tak boleh lawan strawberry kat Korea... rasa dia pun....


We headed to Kampung Daun for lunch... A bit pricey though.... But nice ambience, dine in little huts with the sound of water streaming and waterfall...

 Everybody busy diskusi apa nak makan... dah lah tak tau serving dia macamana... main order je...

 After lunch we headed for shopping extravagant..... No pictures taken..... sibuk shopping.... Today we went to factory outlet around Setiabudi Road e.g. Rumah Mode... Apalagi memborong baju lagi.... Especially my frens sebab size diaorg memang banyak... Malam lak apalagi sesi memanjakan diri di spa... Nie acara wajib bila ke Indonesia...

Hari ketiga takde apa sangat aktiviti... selain menyambung aktiviti shopping di factory outlet at Jalan Dago and also pergi Toko Tiga for original Levi's jeans... Factory for bags and also Donnatello shoes shop.... Dan yang penting sekali as must visit and buy.... brownies kukus dia Kartika Sari dan Amanda.... Ini mesti.... Bought few for my family.... Price wise.... Kartika Sari a bit pricey compared to Amanda.... But most people like Kartika Sari... I like Amanda more... Tapi ya ampun... ramainya orang kat Kartika Sari.... siapa cepat dia dapat... Tapi tempat kelaslah....

We left Bandung in the evening but sadly... sampai airport je... flight delay ke pukul 9.00pm.... And the best thing.... luggage overweight... ha ha ha nie penangan shopping kat Bandung.... not me kay.... my fren...

Bye... bye  Bandung.... Till we meet again in future...
